The world of fine-dining in Mumbai is a dynamic one, with a swanky new restaurant popping up on the streets, every second day. Suffice it to say, there is no paucity of remarkable fine-dining spaces across the city, and yet, somehow, Masque restaurant has managed to stand out as the creme-de-la-creme of gourmet, luxurious dining in Mumbai.

As if being the top fine-dining spot in the city, and furnishing awe-inspiring culinary experiences for foodies wasn't enough, Masque restaurant has recently launched an experimental food R&D space, called the Masque Lab. Arguably, one of the most exciting things to happen to the fine-dining landscape in Mumbai city in the recent past, this much-coveted "freestyle kitchen" will be a site dedicated exclusively to testing and playing around with ingredients, and figuring out what works and what doesn't. Oh, and sharing both the process and product of the experiment, with some very lucky patrons.

Masque Lab will sprawl across an area of 1,250 sq ft, with seating present for just 12 diners. Every month, about 5 dates for dining will be announced by Masque, and the lucky few that sign up on time will be treated with enticing visuals, smells and flavours, as they sit surrounded by some of the best chefs of the country cooking up a culinary storm. This would be one of India's first purely "chef-forward" restaurants, devoid of a preemptively fixed menu, or cuisine.
